I am most proud of my achievement in school. I had a rough time getting adjusted with the idea of college, the work load, and time management. As time went on and with the help of my advisor, things have gotten better. I am tech-savvy and I love to shop!

Well, I have been watching tons of cooking shows. I have been doing so since I was very small. It is one of the ways that helps me de-stress from the day/week. I just love Giada De Laurentis, Rachael Ray, Bobby Flay, Rocco DiSpirito, and Paula Deen. It feels like I can smell the food cooking right through the screen. You are probably wondering what this has to do with College. I will say that we have an awesome culinary program but, its also about relaxation. Relaxation is something that every college student needs. It is very important or you will burn yourself out quick. 

For the last three weeks, I have been re-creating dishes off of TV. I have made Italian Sausage with cherry peppers and polenta (Italian cornmeal), Jerk Burgers (oh yes! They were very spicy), and tried my hand at Stroganoff. I can honestly say that my family loved it. My cat Cinnamon even tried to eat some. Now, I want to try to make the perfect lemon pound cake. Wish me luck!

Keep On Pushing!

It’s that time of the quarter again the final 4 week stretch. It is always a stressful time because it seems like work just piles up on you at once. I believe in taking it slow and easy. Personally, I have been working very hard. It is still an up-down process but, then again that is life.  Homework, exams, quizzes, pop quizzes, etc are really exciting! I actually got a compliment on my improvement which made me feel wonderful. 

It is so exciting to know that I am so close to the finish line. I took my time like the turtle and did not rush it like the hare. It is very important not to rush things. I thought I was in competition with everyone else but, I was really in competition with myself. You are the only one that judges you harshly. It was something I really had to learn. When you start to exude confidence, everything around you changes. 

Dear Readers, Keep your head towards the sky and your eyes in the book.
