Requirements:

  • Culinary students only
  • Junior level or higher
  • A minimum of 3.0 GPA and good attendance
  • Executive Director/Faculty recommendation

Program takes place during the Fall Quarter for ten weeks.

 10 - Week Program

  • Italian Language - basic Italian language
  • Italian Regional Cuisine - cooking techniques that produce authentic Italian cuisine found in the many regions of Italy
  • Tradition of Italian Food II - the production of many Italian foods and the styles and conventions of authentic Italian cuisine
  • Externship - on-site work experience at a local Florentine restaurant
